Veggie Fajitas


Veggie Fajitas


Since I started my healthier diet, I’ve been cooking almost EVERYday. And, I must say I’m loving it! Cooking all my meals allows me to have more control of my diet. Also, since I’m cooking more often, it allows me to be more creative in the kitchen. Who knew I would have so much fun using my imagination in the kitchen?! Today’s dish isn’t super creative, but it’s delicious!


Here’s what I used:


  • 1 Green Pepper
  • 1 Red Pepper
  • 1/2 Onion
  • Mushrooms (hand-full)
  • EVOO
  • Low Fat Refried Beans (my trainer said she preferred I use black beans, but this is what I had at the time)
  • Soft Tortilla Shells
  • Cilantro (optional)


Taco Seasoning

1. Make taco seasoning. Click here for the recipe.


Chopped Veggies

2. Chop veggies into 0.5 inch pieces.

Cooked Veggies

3. Pour some EVOO into a skillet and place the pan over medium heat. Then, dump the vegetables into the skillet and add 2 tablespoons of the taco seasoning. Cook for 10 – 15mins. While the veggies are cooking, heat up the beans.


Put Together

4. Put it together: I start off by lining the shell w/ a tablespoon of the beans. Then, add the veggies. Next, since I love Cilantro so much, I used it as my topping. And, that’s it!



5. Roll it up & enjoy!

I only used a tablespoon of this per fajita…I may not be eating perfect, but thank God I’m eating better!  **G.I.G.**
