Spinach Cheese Swirls

Recipe by Pepperidge Farm.

If I were a cartoon character, I would be Popeye’s sister (or some female related to Popeye), because I love spinach! I mean, who doesn’t like spinach? It’s soooo yummy! And, when you pair it with bread and cheese, who can resist? My mom made this appetizer around the holidays, and I must say I was smitten. As a result, I had to cook it for myself.

Here are the ingredients:

  • 1 egg
  • 1 tbsp. water
  • 1/2 cup shredded Muenster cheese or Monterrey Jack cheese
  • 1/4 cup grated Parmesan cheese
  • 1 green onion, chopped (about 2 tablespoons)
  • 1/8 tsp. garlic powder
  • All-purpose flour
  • 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
  • 1 pkg. (about 10 ounces) frozen chopped spinach, thawed and well drained

Okay, here’s the directions:

  1. Heat the oven to 400°F.  Beat the egg and water in a small bowl with a fork.
  2. Stir the Muenster/Monterrey Jack cheese, Parmesan cheese, onion and garlic powder in a medium bowl.
  3. Sprinkle the flour on the work surface.  Unfold the pastry sheet on the work surface.  Brush the pastry sheet with the egg mixture.  Top with the cheese mixture and spinach.  Starting at a short side, roll up like a jelly roll. Cut into about 20 (1/2-inch) slices (my slices were a little thick – yielded 12 slices) .  Place the slices, cut-side down, onto 2 baking sheets.  Brush the slices with the egg mixture.
  4. Bake for 15 minutes or until the pastries are golden brown.  Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.

…Oh, and did I mention I love green onions too!

Note: Make sure you drain the spinach really good. Otherwise, the swirls will be soggy.

This was easier than I thought!

Okay, okay! I take it back! If I were a cartoon character, I would not be related to Popeye. The women in his family aren’t very feminine. LoL! **G.I.G.**

I agree, it looks like Popeye’s Mom has fought a lot of Brutus’ in her life.
